Peach Blueberry Pie

First pie of the season - Peach-Blueberry and it was delicious! 



It's still a bit early for peach season so they were a bit firm, however after baking the peaches became sweet and soft and delicious!

I cheated a bit with a store bought pie crust but I made up a half batch of pastry for the lattice topping - the filling is just fruit, about a third of a cup of sugar, and a few tablespoons of cornstarch. 

All you need is a bit of warm vanilla on the warm pie and voila - Perfection!
